My favorite life advice... Sidewalk life advice.
This was one of the most popular salads in my cafe and each time I make it, I remember why! Crisp lettuce topped with grilled corn, pico de gallo, shredded cheese, black beans, quinoa, avocado, crispy corn tortilla strips all dressed with Cilantro Cream Dressing! (That's a lot!) As with all salads, add or remove components depending on what you like, but don't leave out the pico! The pico de gallo is an integral part of the salad that reinforces the flavours in the dressing.
This pasta salad was always a favorite with my customers. Noodles and fresh, crispy vegetables coated in a peanut sauce seasoned with soy, toasted sesame, lime, hot sauce, and fresh ginger. Add any vegetables you like and top with toasted peanuts for some extra crunch!
This is one of my favorite summer desserts, especially if I'm lucky enough to have fresh, local strawberries available. A lightly sweetened, crisp tart crust filled with vanilla custard and topped with ripe strawberries. What could be better?
This is probably my very favorite recipe for grilling on the barbeque. Thin beef short ribs (Miami ribs or flanken) marinated in soy sauce, ginger, garlic, sesame, brown sugar, green onion, and Asian pear and cooked for a short time on a blazing hot grill until lightly charred. Delicious.
The combination of strawberries and rhubarb is a family favourite and when I see it at the market I always grab some rhubarb to make a crisp (or if you're lucky, you have it growing in your garden). The sweetness from the strawberries tempers the tartness from the rhubarb - a perfect combination. Top it with a buttery oat topping that gets a little crispy and then serve it warm with a scoop of good vanilla ice cream. Perfect summer dessert.
