Today I tried my Passover pancake recipe in a waffle iron and they were delicious! Crispy edges and tender - I added some fresh blueberries to the batter. Why haven't I done this before?
If you're looking for a lighter meal to have during chol ha'moed, here you go. Eggplant boats stuffed full of fresh grape tomatoes, basil, garlic, balsamic and mozzarella, baked until the eggplant is tender and the mozzarella is melted and just starting to brown. Delicious!
The seders are over but we still have most of the week to eat! Even though I can usually survive a day without cookies or treats, for some reason I find myself looking for a little something around 3 or 4 PM during Passover. That's why it's nice to have a batch of these sitting on the counter. 😉

If you’re a fan of carrot cake or pumpkin muffins or pie, this cake is for you. Roasted sweet potatoes are naturally sweet and moist and they pair beautifully with warm spices and the citrus glaze that’s drizzled on top.
This soup became an instant favorite as soon as I tested it for my book, Soup – a Kosher Collection. It is the simplest soup but is also amazingly flavourful. Carrots and dill are natural partners and although there are no dairy products in the recipe, the soup has an almost buttery flavor.
